Easy Rocky Road Fudge

If there’s one thing y’all seem to love, it’s an easy fudge recipe. This microwave Rocky Road Fudge only takes about five minutes to make!

Peanuts and mini marshmallows add nice saltiness and texture to this fudge recipe. If you prefer, feel free to use walnuts or pecans instead, but classic rocky road has salty peanuts.

Easy Rocky Road Fudge

3 cups semi-sweet chocolate chips
1 14-oz can sweetened condensed milk
4 Tbsp cold unsalted butter, cut into cubes
1/2 Tbsp vanilla extract
1 cup mini marshmallows

1 cup peanuts

  1. Spray an 8″ square pan with nonstick spray.
  2. Place chocolate chips in a microwave-safe bowl. Pour sweetened condensed milk over chips and top with cold butter cubes. (Do not stir.)
  3. Microwave on high for 2-3 minutes, stirring every 30-60 seconds until chips have mostly melted. Stir to finish melting.
  4. Mix in vanilla, mini marshmallows, and peanuts.
  5. Spread mixture in prepared pan. If desired, sprinkle some more marshmallows and peanuts on top.
  6. Refrigerate until set, about 2 hours.
  7. Loosen the sides with a spatula. Flip upside down onto a cutting board. Cut fudge into squares and enjoy! Store in an airtight container at room temperature.
