Apple Chicken Salad

I’m officially obsessed with this chicken salad. With lemon zest, Dijon mustard, diced red apple, fresh thyme, dried cranberries, sliced almonds, and green onion, this easy chicken salad is bursting with flavor.

I absolutely love the use of apple here, both in the salad and in the serving suggestion. The apple adds great moisture, flavor, and crunch. The combination of apple and dried cranberries is a fun twist on a classic chicken salad, which typically has grapes and celery.

Apple Chicken Salad

You can use roasted chicken or rotisserie chicken here. You can of course serve this apple chicken salad as a sandwich but I thought it was adorable to serve this salad on apple slices for my Snow White Tea Party. It’s also a low-carb option if you’re into that sort of thing!

Could this be any more magical for a Snow White party?! This recipe is so delicious, I know that I’ll make this recipe again and again and I’ll always smile because it tastes like a bit of Disney magic.

Apple Chicken Salad

2 pounds chicken, cooked and shredded
1 cup plain Greek yogurt
1 small small lemon (zest and juice)
1 tsp Dijon mustard
1 tsp salt
1/2 tsp freshly ground black pepper

1 Tbsp fresh thyme leaves, chopped
1 cup finely diced red apple
1/2 cup sliced almonds
1/3 cup dried cranberries
2 Tbsp green onion, sliced

  1. Whisk together Greek yogurt, zest and juice from a small lemon, Dijon mustard, salt, ground black pepper, and fresh thyme in a large bowl.
  2. Stir in shredded chicken, diced apple, sliced almonds, dried cranberries, and green onion. If desired, serve chicken salad on apple slices.
