I don’t know about you but I adore good granola. There’s just something about a yogurt parfait with fresh fruit and flavorful granola that really puts a pep in my step.


The fun thing about making granola is that it really is so customizable. Don’t have pecans? Use almonds. Prefer raisins? Go for it. This is a fabulous base for you to get creative. Just promise me you’ll use dried fruit. To me, granola just isn’t good unless it has dried fruit! Dried cherries are my absolute favorite.


I used part honey, part brown sugar, and a little maple syrup and vanilla extract for flavor. Really take your time to make sure the oat mixture is thoroughly coated before baking.


Granola is super easy to make and, in my opinion, quite fun too! Just toss your oats, nuts, and pumpkin seeds, make the sauce on the stove, mix it all together, then pop it in the oven.


This recipe makes about six cups of granola but easily doubles if you want to make a huge batch. This will keep for about 2-3 weeks stored at room temperature and also makes a thoughtful homemade gift!


Note: this will get a little dark and crispier as it sits. Start checking it at 35 minutes!


Homemade Granola
3 cups rolled oats
1.5 cups chopped pecans
1/2 cup pumpkin seeds
6 Tbsp butter
1/4 cup honey
1/4 cup brown sugar
1 Tbsp maple syrup
1/2 tsp vanilla extract
1 tsp ground cinnamon
1/4 freshly grated nutmeg
3/4 tsp salt
1/2 cup dried cranberries
1/2 cup dried cherries
- Preheat oven to 325 degrees. Grease a large baking sheet with nonstick spray.
- In a large bowl, stir together oats, pecans, and pumpkin seeds.
- In a sauce pan, combine butter, honey, brown sugar, and maple syrup and cook over medium low heat, whisking occasionally, until uniform in color. Whisk in vanilla, cinnamon, nutmeg, and salt.
- Pour sauce over oat mixture and stir thoroughly to evenly coat. Pour on baking tray and spread mixture out, then pop in the oven and bake for 35-40 minutes, tossing once halfway through.
- Remove from oven, cool completely, then stir in dried cranberries and dried cherries. Store in air-tight containers.
