Looking for a Saint Patrick’s Day dessert that’s sure to please a crowd? Bake these Saint Patrick’s Day Brownies! I used the Lucky Leprechaun sprinkles from Fancy Sprinkles but I’ve linked a similar kind on my Amazon store for you here.


These brownies are incredibly rich and fudgey. Paired with cream cheese frosting, these are knock-your-socks-off good.






Note: since these have cream cheese frosting, you do ned to store these in the refrigerator. Bring to room temperature for thirty minutes before serving.


I used my favorite Frosted Brownies recipe here but if you want to shake it up, you could add a tablespoon of Bailey’s to the brownie batter or do 1/4 vanilla + 1/4 mint extract in the frosting. These are delicious no matter what version you make!


Saint Patrick’s Day Brownies
½ cup unsalted butter, cut into cubes
3 oz unsweetened chocolate, chopped
½ cup granulated sugar
½ cup dark brown sugar
2 large eggs
1/2 tsp vanilla extract
¾ cup all-purpose flour
1 tsp baking powder
¼ tsp salt

Saint Patrick’s Day sprinkles
- Preheat oven to 350 degrees Fahrenheit. Line an 8” square pan and spray with nonstick spray.
- Combine chopped chocolate and cubed butter in a microwave-safe bowl. Microwave at 50% power until melted, about 2 minutes, stopping to stir every 30 seconds or so.
- Remove from microwave and whisk in granulated sugar and dark brown sugar. Whisk in eggs and vanilla. Fold in dry ingredients just until combined, then spread into prepared pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely, then frost with cream cheese frosting and decorate with Saint Patrick’s Day sprinkles.
Cream Cheese Frosting
4 oz cream cheese, softened (full fat!)
3 Tbsp unsalted butter, softened
1 ¾ cups powdered sugar
½ tsp vanilla extract
- Combine cream cheese and butter until smooth. Slowly mix in powdered sugar. Mix in vanilla extract.
