Looking for a nutrient-dense dish? Make this Lemon Kale Quinoa Salad! I love food like this: healthy, delicious, easy. Ask any of my friends and they’ll tell you I make a big ol’ chilled salad every week.


I absolutely adore quinoa. If you can cook pasta, you can cook quinoa. It’s packed with protein and goes so well in a chilled salad!


This is such a simple salad but packs a punch with flavor. There’s just something about lemon, green onion, dill, and feta that goes together so beautifully.




I paired with this with my Perfect Grilled Chicken and Lemon Parmesan Asparagus for a quick and easy dinner! I made the quinoa salad a few hours before dinner and then everything came together in just 10 minutes!


Lemon Kale Quinoa Salad
1 cup dry quinoa
1 bunch curly kale
4-6 green onions, sliced
1 cup feta cheese, crumbled
1/2 cup slivered almonds
2 Tbsp Fresh dill, roughly chopped
Lemon Garlic Vinaigrette, recipe follows
- Cook quinoa according to package directions. Let cool.
- Rinse one bunch of kale leaves and pat dry. Remove the stem from each leaf and chop kale.
- Stir together quinoa with chopped kale, green onion, feta cheese, slivered almonds, and dill. Toss salad with lemon garlic vinaigrette. Chill until ready to serve. Garnish with lemon wedges and dill sprigs.
Lemon Garlic Dressing
1/4 cup fresh lemon juice
1/4 cup olive oil
Zest from half a lemon
1 garlic clove
Salt, pepper to taste
- Zest half a lemon in a small bowl, then squeeze 1-2 lemons to get a quarter cup of lemon juice. Whisk lemon zest and juice with olive oil.
- Use zester to grate garlic clove in the dressing, then season with salt and pepper to taste.
