I spent the evening baking cookies to take to my family’s lake house. I chose this recipe because it’s chocolate, so the females will like it, and it’s salty, so the males will like it.

Dark Chocolate Fudge Pistachio Cookies
1 cup butter, at room temperature
1 1/2 cups sugar
2 eggs, at room temperature
1 teaspoon vanilla
2 cups flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon milk
1 cup dark chocolate chips
1/2 cup pistachios*
*I buy them in the shell because they’re cheaper, making this recipe a labor of love.
Cream the butter, sugar, eggs and vanilla together. Slowly add the flour, cocoa powder, baking soda, and salt followed by the milk.
Shell pistachios.
Fold in dark chocolate chips and pistachios. Refrigerate for two hours. Preheat oven to 350 degrees and use a cookie scoop to drop cookies onto cookie sheets. Bake for 7-10 minutes. (I have a convection oven and baked this batch for exactly 6 minutes and 45 seconds.)
Sneak two cookies then pack up for a family vacation!
