Blueberry Mint Smoothie

I might as well call this Gesundheit Smoothie. It’s that good for you! I’m suffering from allergies today and needed a pick-me-up to get through the afternoon.

Blueberry Mint Smoothie
1 cup of ice
1 Meyer lemon
1 cup of milk (I like 1%)
1 cup of blueberries
1 tbsp of local honey (or more to taste)
8-10 mint leaves

Fill a tumbler with ice. Crush ice in a blender until fine.

Zest a Meyer lemon directly into blender. Squeeze the lemon into your tumbler. Be sure no seeds make it into the glass! Pour milk into the tumbler until full. Add contents of tumbler to your blender and blend.

Add blueberries, mint leaves (reserving a pretty top for garnish), and about a tablespoon of honey. Blend until smooth.

Taste and add more honey if desired. Enjoy!

Note: Seasonality is key to great results in the kitchen. I used locally grown blueberries, mint from my own backyard, and honey from a local farm in this recipe.
