I’m embarrassed to even post this “recipe” but I have many requests for more easy entertaining ideas so here you go! This is one of my all-time favorite summer appetizers/side dishes. It takes two seconds to throw together and always impresses guests.
Prosciutto Wrapped Cantaloupe
8 oz prosciutto
- Buy the juiciest cantaloupe you can find. The cantaloupe should be shockingly heavy for the size and should smell slightly sweet. I vastly prefer Tuscan (striped) cantaloupe. I find they’re juicier in general.
- Cut the cantaloupe in half and scoop out the seeds. Carefully cut cantaloupe into spears, then cut the rind off.
- Wrap prosciutto around cantaloupe spears and serve immediately.
