This is an updated version of my classic Rocky Road. This recipe uses about a half batch of my homemade maple marshmallows and wow, is this candy good! The maple marshmallows melt in your mouth. They really elevate rocky road!
This no-bake treat would be a wonderful addition to a Christmas cookie plate. (And who doesn’t want homemade marshmallows as a holiday gift with a jar of my hot cocoa mix?!) This is so fast and easy to make – the perfect thing to do with leftover marshmallows!

Maple Walnut Rocky Road
4 cups homemade maple marshmallows
8 oz semi-sweet Ghirardelli baking chocolate, finely chopped
1/2 cup (1 stick) unsalted butter
Pinch of salt
1/2 cup chopped walnuts
- Grease an 8” pan.
- Cut marshmallows into fourths. Arrange in prepared pan.
- Heat butter with a pinch of salt in a double boiler (or a bowl set over a pan of simmering water) until melted. Add finely chopped chocolate and whisk until smooth and glossy. Stir in chopped walnuts, remove from heat, and let cool for for about five minutes.
- Pour chocolate-peanut mixture over the marshmallows, carefully working chocolate between into the crevices between the marshmallows. Refrigerate until set, about an hour, then cut into squares and enjoy.
