It’s Girl Scout cookie season, y’all. I’ve been threatening to come up with some thin mint recipes for years but I didn’t get my hands on any the last couple of seasons. Luckily my friend Candy came through and got some boxes to me! I am delighted to *finally* present you with: Thin Mint Milkshakes!
I wrote this up for two but you could easily make four in a blender or do a half batch for a single milkshake, like I did in the video. If you want it mintier, you could add a teeny bit of peppermint extract but I think it’s fantastic as-is. It’s chocolatey with a kiss of that cool mint flavor. Mmhmm!
Want to add a little kick? Reduce the milk to 3/4 and add 2 oz peppermint schnapps. Yum!
Thin Mint Milkshakes
Serves 2
6 scoops vanilla ice cream
1 cup milk
8 Thin Mint cookies
Serving suggestion: whipped cream, two more cookies
- Combine ice cream, milk, and Thin Mint cookies in blender until smooth. Top with whipped cream. Crush two more cookies to sprinkle on top.
Note: to make homemade whipped cream, whip 1/2 cup of heavy whipping cream in a metal bowl with a metal whisk until soft peaks form. Whisk in 2 Tbsp powdered sugar and 1/2 tsp vanilla extract. Spoon or pipe on top of milkshakes.
