Goat Cheese Smashed Potatoes

This is one of the best potato dishes I’ve ever made and it’s so simple. I had really delicious goat cheese in my fridge from Lost Ruby Ranch that I picked up at the farmers market and decided to try it in a potato dish. The result was so amazing, I just had to share the recipe with you. I’m telling you, these Goat Cheese Smashed Potatoes are Thanksgiving worthy!

All I did was boil some small Yukon gold potatoes until they were fork tender, smash them with a fork, then mixed them with a little chicken broth, goat cheese, black pepper, and fresh chives. They were positively transformed into the most luscious potatoes. I literally gasped when I took a test bite. (Note: chicken broth has salt but feel free to add a little more to taste if you like. I didn’t feel like it needed any.)

I  made a fairly small amount on this particular day but this recipe would easily double/quadruple to serve a crowd.

Summer Vineyard Picnic

No mixer needed here – I literally used a fork to make this dish. I suppose if you wanted a true mashed potato, you could use a mixer but I’m half Irish and I love a good smashed potato dish. I intended to serve this warm but even room temperature, these potatoes were absolutely bomb at my Summer Vineyard Picnic. I hope you love them as much as I do!

Goat Cheese Smashed Potatoes

1 pound Yukon gold potatoes 
4 oz goat cheese 
1/4 cup chicken broth
Black pepper to taste
Fresh chives

  1. Set small Yukon gold potatoes in a pot and cover with water. Bring to a boil, cover, and let cook until fork tender, about 20-25 minutes.
  2. Drain, then immediately put potatoes back in the pot with the lid on to steam for ten minutes. Smash potatoes with a fork and mix with goat cheese, chicken broth, black pepper, and chives. Add a bit more chicken broth or goat cheese as needed. Delicious served warm, room temperature, or even cold!
