Apple Cider Floats

Apple lovers, this is for you! I polled my Facebook audience in September to ask if they prefer pumpkin or maple as a fall flavor and I was startled to see that most actually prefer apple so I vowed to come up with some delicious apple treats for you this fall. With old-fashioned vanilla ice cream, apple cider, ginger beer, and cinnamon, these apple cider floats are fall in a glass!

My dad took one sip of his float and exclaimed, “Now THIS is fall!” I couldn’t agree more. To make them, I filled my favorite milkshake glasses with three scoops of Tillamook French vanilla ice cream but I didn’t measure anything else. I poured apple cider over the ice cream until the glasses were about half full then topped off with ginger beer. I would say one bottle of ginger beer would easily make 4 apple cider floats.

If you want to make your own apple cider, you can get my recipe here. It’s very fun to make! I already had organic apple cider in the fridge so I used that for this recipe and it was delicious. The ginger beer is essential to give it that little bit of sparkle that make floats so unique. I’m obsessed with Reed’s and literally always keep it in my fridge. 

These get even more amazing as the ice cream starts to melt into the apple cider and ginger beer to form one deliciously creamy dessert. Don’t skip the cinnamon! It adds so much. Want to turn this into a cocktail? Add a shot of bourbon!

Apple Cider Floats
Serves 2
6 scoops vanilla ice cream
Apple cider
Ginger beer
Cinnamon
For garnish: apple slices

  1. Fill chilled milkshake glasses with three scoops of vanilla ice cream. Pour apple cider about halfway up the glass, then top with ginger beer. Add a dash of cinnamon and an apple slice for garnish. Serve immediately.
