Looking for an adorable Halloween appetizer? Make Eyes of Newt: classic tortilla roll-ups are topped with a bit of cream cheese spread and sliced black olive “eyes” for an easy, spooky bite.
This is a great make-ahead recipe. The filling and roll-ups can be made a day or two before the party. Then all you have to do is slice them and decorate them!
This recipe easily doubles. Don’t skimp on the filling for each tortilla. You want nice, big roll-ups.
Eyes of Newt
8 oz cream cheese, at room temperature
4 oz can chopped black olives
4 oz can mild green chilis, rinsed
3-4 chopped green onions, chopped
1 Tbsp Italian parsley, chopped
4-5 flour tortillas
For eyes: cream cheese spread, sliced black olives
- Beat cream cheese with mixer until smooth. Stir in chopped black olives, green chilis, green onions, and Italian parsley. Spread mixture on flour tortillas and carefully roll up. Chill well.
- Slice cold tortillas into rounds and top with a dollop of cream cheese spread and a single sliced black olives.
