Looking for a healthy side dish you can make all summer long? You’ve come to the right place! With Feta cheese, Kalamata olives, tomatoes, cucumbers, and fresh oregano from the garden, this easy Greek Quinoa Salad recipe has some of my favorite ingredients.


I recently realized that there were no quinoa recipes here on The Rose Table, which is pretty strange considering I’ve been making quinoa salads since long before I started this website! This is one of my favorite combinations. Y’all know how much I love Greek flavors!


This is especially love to make in the summer when you have sun-ripened tomatoes in the garden! It’s the perfect make-ahead dish and would be perfect with grilled chicken, beef kofta, or lamb lollipops.


Greek Quinoa Salad
1 cup quinoa
1.5 cups cherry tomatoes, halved
1 cup cucumber, sliced
1/2 cup Kalamata olives, sliced
1/2 cup roasted red bell pepper, chopped
4 green onions, sliced
6 oz feta cheese, crumbled
2 Tbsp fresh oregano, chopped
Lemon dressing, recipe follows
- Cook quinoa according to package directions. Let cool.
- Toss cooked quinoa with tomatoes, cucumber, Kalamata olives, roasted red bell pepper, green onions, feta cheese, and fresh oregano.
- Add lemon dressing if serving immediately; if refrigerating, use half of the dressing and toss with the remaining vinaigrette right before serving. Garnish with lemon wedges and fresh oregano.
Lemon Dressing
1/4 cup fresh lemon juice
1/4 cup olive oil
Zest from half a lemon
Salt, pepper to taste
- Zest half a lemon, then squeeze 1-2 lemons to get a quarter cup of lemon juice. Whisk with olive oil, lemon zest, and salt and black pepper to taste.
