Pineapple Julep

Y’all are in for a treat. I had leftover pineapple simple syrup in the fridge from my Bridgerton party (specifically, my Diamond of the Season Punch) and decided to try it with bourbon and voila, a delicious Pineapple Julep was born!

It’s no secret that I’m a bourbon girlie. I love a classic Mint Julep, a Lavender Julep, and now a cheerful Pineapple Julep. This is especially adorable with some pineapple cubes, pineapple slices, or even some pineapple spears in lieu of mint sprigs for a tropical twist on a front porch favorite.

Pineapple Julep

Pineapple Julep

2 oz bourbon
1/2 oz pineapple simple syrup
Finely crushed ice
Mint sprig, fresh pineapple cubes for garnish

  1. Fill mint julep glasses with crushed ice. Pour bourbon and pineapple simple syrup over ice. Garnish with mint sprig and pineapple cubes on a toothpick.

Pineapple Simple Syrup

1/2 cup sugar
1/2 cup water
1 cup cubed pineapple

  1. Bring sugar and water to a boil in a small sauce pan until sugar is completely dissolved. 
  2. Remove from heat an pour syrup over pineapple cubes in a heatproof bowl. Cover and refrigerate for 8 hours or overnight. Strain syrup from solids. Keep in a jar in the fridge for several weeks.
