Simple Shrimp Salad

I originally came up with this recipe as a tea sandwich for my Mary Poppins Party and it was a huge hit! You can of course also just enjoy this Simple Shrimp Salad with a fork or serve it in lettuce cups.

This recipe easily doubles and is perfect for summertime when you don’t want to cook and want something cool and quick for lunch!

If you want to jazz it up a bit, this would be great with a dash of hot sauce or cayenne.

Simple Shrimp Salad

2 cups (1 pound) cooked shrimp, chopped
6 Tbsp Greek Yogurt
2 tsp lemon juice
Zest from half a lemon
2 tsp chopped chives
1 Tbsp Italian parsley
1 Tbsp finely chopped celery

  1. Whisk together yogurt, lemon juice, lemon zest, chives, parsley, then stir in chopped shrimp and celery. Serve on lettuce or in a tea sandwich.
