This Mixed Berry French Toast is basically my dream breakfast. It also happens to be the perfect patriotic breakfast for 4th of July! The Red White and Blue comes strawberries, whipped cream, and blueberries.
This quick and easy breakfast is perfect to make in the summertime when fruit is at its finest.


My best tip is to always use brioche. I literally will not use any other bread for French toast. I keep brioche in the freezer and pull out however many slices I want while my coffee is brewing. An hour later, the bread is ready to go!




This recipe easily doubles and triples to feed a crowd! I love to use my electric skillet to make large quantities of french toast.


Mixed Berry French Toast
Serves 1
2 slices brioche
1 egg
2 Tbsp heavy cream
1 Tbsp sugar
Splash vanilla extract
1 Tbsp butter
For serving: whipped cream, strawberries, blueberries, maple syrup
- Beat egg in a shallow dish. Whisk in cream, sugar, and a splash of vanilla. Soak slices of brioche for two minutes. Flip and soak other side for two minutes.
- Heat 1 Tbsp butter in a nonstick skillet. Add brioche and cook for two minutes per side over medium heat.
- Transfer to plate and serve with whipped cream, strawberries, blueberries, and maple syrup.
