I always vow to write more about the lake life and then I get so busy with recipes that I completely forget. I had such a lovely time at the lake house with my parents last weekend that I wanted to share it with all of you!

Winnsboro Farmers Market
My dad and I woke up early on Saturday morning to go to the Winnsboro Farmers Market, which is near the train tracks with shaded stalls and ample parking. We got tons of locally grown fruits and vegetables, plus treats for Henry, baked goods, flowers, and more.

We were disappointed that there was no chicken available (we heard there would be and originally planned dinner around it!) but we decided to go vegetarian for dinner.

Lake House Food
We ate like kings this weekend! On night one, we grilled a flank steak and ate rosemary roasted potatoes and a delicious salad with red leaf lettuce that I grew in my Aerogarden plus my homegrown Cherokee purple tomatoes.

The next night, my mom used leftover chopped flank steak in a fabulous pasta dish she spontaneously whipped up. We were originally going to go out to eat! I also made a rustic caprese salad using my homegrown Black Krim tomatoes and Cherokee purple tomatoes, plus my mom’s gorgeous basil.

We spent quite a long time watching the Authentic Tuscany youtube channel on Saturday and were inspired to make fried eggplant with tomato compote and bread crumbs. It was absolutely delicious! We made it up and I really need to write it down so I don’t forget what we did. If only there was a website where I could do that – ha!

Lake Views
We went boating, zoomed around on the jet ski, and enjoyed sunset around the fire pit. We proudly displayed our pirate flag on our boat, which is obviously my contribution to the lake house! My mom flies it with pride.
