I am obsessed with easy salad! It’s so delicious and simple. I served this at Disney Dinners: Mulan and several guests commented that they don’t even like cucumbers and loved this salad. Not a single slice was left on anyone’s plate! I now make this recipe all the time.
You could certainly use a mandolin for quick, thin slices but I don’t own a mandolin and my Wüstof chef’s knife was perfectly capable of paper thin slices. You do want to eat this salad the day it’s made; it’s best within four hours.
This is easy to multiply! For Mulan I used 3 cucumbers, 3 Tbsp rice vinegar, 1.5 Tbsp sesame oil, 1.5 Tbsp sugar, 3 tsp soy sauce, 3/4 tsp salt, and 1.5 tsp sesame seeds.Photography by My Curly Adventures.

2 medium English cucumbers, sliced paper thin
2 Tbsp rice vinegar
1 Tbsp sesame oil
1 Tbsp sugar
2 tsp soy sauce
1/2 tsp salt
1 tsp black sesame seeds
- In a medium bowl, whisk together rice vinegar, sesame oil, sugar, soy sauce, salt, and sesame seeds.
- Thinly slice cucumbers. Add cucumbers to bowl and stir to coat.
- Refrigerate until ready to serve.
