Asian Cucumber Salad

I am obsessed with easy salad! It’s so delicious and simple. I served this at Disney Dinners: Mulan and several guests commented that they don’t even like cucumbers and loved this salad. Not a single slice was left on anyone’s plate! I now make this recipe all the time.

You could certainly use a mandolin for quick, thin slices but I don’t own a mandolin and my Wüstof chef’s knife was perfectly capable of paper thin slices. You do want to eat this salad the day it’s made; it’s best within four hours.

This is easy to multiply! For Mulan I used 3 cucumbers, 3 Tbsp rice vinegar, 1.5 Tbsp sesame oil, 1.5 Tbsp sugar, 3 tsp soy sauce, 3/4 tsp salt, and 1.5 tsp sesame seeds.

2 medium English cucumbers, sliced paper thin
2 Tbsp rice vinegar
1 Tbsp sesame oil
1 Tbsp sugar
2 tsp soy sauce
1/2 tsp salt
1 tsp black sesame seeds

  1. In a medium bowl, whisk together rice vinegar, sesame oil, sugar, soy sauce, salt, and sesame seeds.
  2. Thinly slice cucumbers. Add cucumbers to bowl and stir to coat.
  3. Refrigerate until ready to serve.
