This salad is so damn good. I’m not a huge dill fan but it’s perfect here, and gives it such a different flavor. This Cucumber Tomato Dill Salad tastes fresh and healthy and is a great side dish. This would also be delicious tossed with some lemony orzo for a heartier lunch!

This is hardly even a recipe but I’m making an effort this year to post more of the easy food I eat every day. This is a great example! I’m not even putting quantities because you can make as much or as little as you want.

For my recent summertime picnic, I used half of a hot house cucumber, half a pint of cherry tomatoes, one small avocado, a few tablespoons crumbled feta, a sprig of dill, and enough EVOO and balsamic vinegar to coat. I rarely measure when I make salad like this. I just toss it all together! Easy peasy.

Cucumber Tomato Dill Salad

English cucumbers, sliced
Cherry tomatoes, halved
Avocado, cut into chunks
Feta cheese
Dill
1:1 ratio extra virgin olive oil and balsamic vinegar

  1. Toss all ingredients together. Serve immediately or refrigerate until ready to eat.
