How many times am I going to write “this is not a recipe” on The Rose Table today? At least once more, it seems. (That’s for all my die-hard Pirates of the Caribbean fans!) This is a method for grilling sliced zucchini.

When I say grilling, I should note that I mean on a BBQ. It has come to my attention that in other parts of the country, a “grill” refers to a grill pan and a “BBQ” is the large propane thing in your backyard. In Texas BBQ is food group and to BBQ is to slow-cook something – sometimes for days! – smothered in sauce or a rub. A grill or grilling is referring to anything cooked on a gas or charcoal grill.
This is a great side dish for summer time because zucchini takes just about five minutes to cook on the grill. I didn’t use any herbs or anything for this at my Pirates of the Caribbean dinner party because the zucchini was smothered with ginger lime beurre blanc. This dish is delicious plain, with herbs, and even sprinkled with cheese for the last minute on the grill or sprinkled with parmesan after you take it off!

Grilled Zucchini & Squash
Zucchini, squash
Salt, pepper
- Preheat grill to 400 degrees. Spray grill pan with cooking spray. Set grill pan on grates.
- Cut zucchini and squash into rounds. Toss with extra virgin olive oil, salt, and pepper. Cook in grill pan on the grill for 5-8 minutes, turning regularly until fork tender and nicely browned. Serve immediately. Delicious served with ginger lime beurre blanc!
