It never ceases to amaze me how many dishes are served with pumpkin sauce in the Caribbean. It really doesn’t even taste like pumpkin by American standards. It reads more carrot to me. Either way, it’s absolutely fantastic alongside any fried fish dish, such as my Coconut Shrimp.
I made this for my Disney Dinners: Pirates of the Caribbean party. It’s just three ingredients plus seasoning and is pretty healthy as far as decadent sauces go. This is a winner for sure!

1 cup pumpkin purée
1 tsp cumin
1/2 tsp salt
1/4 tsp cinnamon
1/8 tsp black pepper
1/8 tsp cayenne pepper
2 Tbsp Brown sugar
1 cup coconut milk
- In a small saucepan over medium heat, add the pumpkin puree, spices, and brown sugar. Cook for 5 minutes, stirring frequently.
- Slowly add the coconut milk and continue to cook. Lower the heat and let the ingredients simmer for about 5 minutes.
- Remove the pot from the heat and cool. Serve room temperature in a bowl alongside coconut shrimp.
