Simple Roasted Potatoes

Simple Roasted Potatoes

I’m half Irish, half German. There is no amount of potatoes I cannot take down. I eat potatoes early four or five days a week so it’s startling that there are hardly any recipes for potatoes here on The Rose Table, probably because I don’t consider any of my potato cooking methods recipes! But I’m making an effort to bring you more methods this year because this is how I eat.

I served simple roasted potatoes at Disney Dinners: Pirates of the Caribbean, a very Caribbean side dish indeed. Normally I make rosemary roasted potatoes but I seasoned these with just salt and pepper because I knew the potatoes would be smothered with ginger lime beurre blanc so they didn’t need anything else!
