This pesto is to die for. I seriously cannot get enough of it! I love sun-dried tomatoes in pretty much everything but wow does this pack a flavor punch. I ate a grilled cheese with just this and cheddar on sourdough and it blew my mind.
What’s so special about this recipe is that it uses sun-dried tomatoes so you can make this all winter long when you’re dying for a taste of summer. I hope you love this easy recipe as much as I do!

Sun-dried Tomato Pesto
4 oz sun-dried tomatoes packed in oil
1/4 cup pine nuts
1 garlic clove
1/4 cup olive oil
1/4 cup parmesan cheese
Salt, pepper
- Blend the sun-dried tomatoes, pine nuts, and garlic in a food processor. Stream in olive oil. Season to your liking, then stir in cheese and serve immediately.
