What’s better than thick, fluffy pancakes hot off the griddle? This is my grandmother’s recipe and I’m telling you, it cannot be improved upon. It’s truly perfect. And it comes together in minutes in one bowl! What’s not to love?

Best Buttermilk Pancakes Recipe

I need to take better photos of these but trust me: these are thick, fluffy, perfect pancakes. And because I know you’ll ask: if you don’t have buttermilk, combine 1 cup of regular milk with 1 Tbsp vinegar or fresh lemon juice. Stir and let the mixture stand for five minutes. It will have a similar consistency to buttermilk.

The Rose Table’s Buttermilk Pancakes
Makes 6-8 pancakes
1 egg
1 cup buttermilk

2 Tbsp shortening, melted
1 cup all-purpose flour
1 Tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 teaspoon salt

  1. Beat egg.
  2. Add remaining ingredients in order listed, beating with a wire whisk after each addition.
  3. Butter heated griddle or electric skillet.
  4. Use a 1/3 measuring cup to pour batter evenly onto hot skillet.
  5. Turn with spatula when bubbles appear. Cook for another minute or two until the underneath is golden.
