Stuffed Dates

I came up with this incredibly easy, tasty recipe for Disney Dinners: Indiana Jones since dates get not one but TWO scenes in Raiders of the Lost Arc and it has me wondering why I haven’t been making stuffed dates all these years! They’re so easy and delicious.

This is a great make-ahead party appetizer. You could easily make these the day before a party (minus the honey), then refrigerate them until about an hour before you want to serve them. Let them come to room temperature, then drizzle warm honey on top to finish them all.

Do you have to use goat cheese? Well no but my mom LOVES dates and had the rough gig of taste testing six different versions of this for you guys and we both loved this one unanimously. It’s without a doubt the tastiest with goat cheese but cream cheese was our second pick if you really dislike goat cheese.

Do you have to add the honey? Not necessarily but it’s fantastic! Do you have to add the cayenne? Not at all, you can just have sweet honey instead of spicy honey. I thought spicy honey would be a nice nod to the “bad dates” line in Raiders of the Lost Arc

Stuffed Dates with goat cheese, pistachio, honey

Stuffed Dates
24 pitted Medjool dates
4 oz goat cheese, at room temperature
3 Tbsp lightly roasted, salted pistachios
Fresh thyme leaves
1/4 cup honey
Optional: 1/8 tsp cayenne powder

  1. Open up the dates and stuff with softened goat cheese. Top each date with three pistachios and fresh thyme leaves.
  2. When you have all of your dates stuffed, warm honey with 1/8-1/4 tsp ground cayenne pepper (depending on how spicy you want it), then drizzle the spiced honey over the dates.
