I’m confident you guys will do a much prettier job than I did! I made these in such a rush and they still turned out delicious. I bought cute sticks to insert in the pineapple spears and unfortunately broke half of them so be careful. You really want something flat like a classic popsicle stick or thin like a metal skewer for this.

These are so quick and easy to make. If you have a pineapple and chocolate on hand, you’re about fifteen minutes away from enjoying this easy treat!

Chocolate Covered Pineapple
8 pineapple spears (1 pineapple)
8 oz semi-sweet baking chocolate
4 tsp shortening
Optional: white chocolate

  1. Cut ends off of pineapple, then cut pineapple away from the core. You should have four long piece. Cut each in half so that you have eight pineapple spears. Pat the spears with a paper towel to remove access juice.
  2. Finely chop baking chocolate and place in a heatproof bowl with shortening. Microwave at half power for about 2 minutes, stirring every 15-30 seconds until smooth and glossy.
  3. Gently insert a flat skewer in each pineapple spear.
  4. Spoon the chocolate over each pineapple spear, rotating to thoroughly coat. Set the finished treat on a baking sheet lined with wax paper. When you’re done coating all spears, set the sheet in the fridge for ten minutes to set. 
  5. Optional: drizzle with melted white chocolate to decorate and set in the fridge for a few minutes.
