It’s no surprise that Allegretto Vineyard Resort’s only restaurant is fantastic, since everything at Allegretto is exquisite. The Paso Robles restaurant is beautifully appointed with white stone, purple accents, and gorgeous chandeliers. We mostly opted to eat breakfast and dinner outside though, as the patio at Cello Ristorante has an incredible sunset view and the weather was practically perfect. With innovative cocktails and lots of fun plates to share, you’ll want to eat here again and again!





Dinner
We ate dinner at Cello Ristorante twice and I couldn’t even wait to tell you about the freaking pizza. We ordered the Campagnolo pizza with basil pesto, chicken, roasted potatoes, pickled onion, and mozzarella. Omg! It was so cheesy and fresh and delicious. We even ate it cold leftover and it still tasted amazing.

With grilled lemon, thick-cut bacon, and real anchovies, the Caesar salad is also a must and goes perfectly with a pizza. You can also get the Caesar topped with chicken, salmon, shrimp, or steak. Yum!


As for appetizers, the charcuterie is lovely and nice to snack on back on your courtyard terrace if you don’t finish it all at dinner. The charcuterie board had Mortadella, chorizo, and salami, brie, Marcona almonds, Manchego cheese, candied walnuts, grapes, dried fruits, fig jam, olives, crackers, a lovely assortment for any palette. The winter burrata salad has house-made focaccia, baby beets, and a delicious garlic confit.


But my absolute favorite dinner item at Cello Ristorante has to be the Brussels Sprouts. This dish is a 10/10. It’s a little spicy without being overpowering. The creamy gorgonzola is the perfect contrast to the heat. The use of Nueske bacon here is DIVINE and the sauce is sweet and sticky and amazing. It’s a must-order dish for foodies!

Dessert
I wish we had eaten more desserts at Cello, but I do have to highlight the only one we did try: the Cello Lemon Cake. Prior to my trip, I had written “Order Cello Lemon Cake!!” on my Paso Robles notes and boy am I glad I did. This moist cake is the perfect combination of sweet and tart. I’m hard to impress when it comes to cake but Cello does not disappoint with its pastries.

Breakfast/Brunch
There are quite a few breakfast and brunch options at Cello, including a weekend buffet that we sadly did not partake in. I kicked off my birthday with Belgian waffles served with lemon curd. I don’t normally order waffles at a restaurant but I just couldn’t resist the fluffy Belgians with California berries.


We also picked up a pastry box on our way to Hearst Castle, which I highly recommend doing if you’re in rushing off somewhere. The box came with a variety of fruit pastries, mini chocolate croissants (which we delighted in more than once!), a super soft blueberry muffin, and more. We even ate the last ones on the way to the airport days later and they were still delicious!

My absolute favorite breakfast item though was the bagel with lox, which is on the menu as “Royal Cambridge House Open-Fire Smoked Salmon.” The presentation alone had me so excited! The dish is served with whipped cream cheese in tantalizing piles under toasted bagel pieces with a stunning smoked salmon rose in the center. Are you kidding!? This dish was made for me! My dream dish…in the shape of the rose! Perfection.


Coffee
Last but certainly not least, I have to give a shoutout to the coffee at Allegretto. It’s my biggest pet peeve when I’m traveling that I can’t seem to get a decent cup of coffee but that is NOT the case here. The coffee is excellent. You can either enjoy a piping hot cup at Cello or get the same coffee to go in the lobby at the convenient coffee bar, further proving that Allegretto really cares about the guest experience.
