My mom has been making tortilla roll ups as long as I can remember. I make them for most big parties I host because they’re so fast and easy to make and it’s a filling appetizer that requires no cooking. What’s not to love?
These are bursting with flavors and color thanks to the green chilis and roasted red bell peppers. I made these beauties for my Cinderella Ball and called them Carriage Wheels for a whimsical twist. No matter when you serve them, I hope you get as addicted to them as I am!

Tortilla Roll Ups
10-12 Tortillas
2 8-oz blocks cream cheese
2 4-oz cans sliced black olives, drained
2 cans diced green chilis, drained and rinsed
1 cup roasted red bell peppers
3-4 green onions, sliced thing
1/4 cup Italian parsley
- Mix together cream cheese, black olives, green chilis, roasted red bell peppers, green onions, and parsley. Spread on tortillas. Roll tortillas up and slice into rolls.
- Make ahead: Mix the filling together days before a party. The morning of the party, fill and slice the rolls.
