Blueberry Date Salad

I love a good salad! I’m so bad about posting salads that I make. I eat salad probably five days a week: both big dinner salads and side salads. This Blueberry Date Salad combination was too delicious not to share!

I made this fantastic salad for dinner last night with pan-seared chicken and gnocchio in a mustard cream sauce. It was such a wonderful side! The saltiness from the pistachios and feta cut the sweetness of the dates and blueberries perfectly. I picked up the blueberries last weekend at the farmers market and can’t get over how flavorful they are. You can stop there or add a little feta cheese before tossing with your favorite balsamic vinaigrette.

Salads are definitely one of those things you don’t need to measure so please don’t pull out a tablespoon measure for this. Just sprinkle some pistachios on the salad and measure with your heart. The measurements are really rough guidelines and obviously, you could easily make this for one or for a large group!

Blueberry Date Salad
4 cups spring greens or spinach
1/3 cup fresh blueberries
4 dates, cut into small pieces
2 Tbsp pistachios
1 oz feta cheese
Balsamic vinaigrette

  1. In a medium salad bowl, combine greens, blueberries, dates, pistachios, and feta cheese. Toss with balsamic vinaigrette.
