Meet your new favorite bacon
Rose Table reader (and personal friend!) Suellen traveled to Hawaii a year or so ago and emailed me a photo of her breakfast bacon asking me to recreate it because it was the best bacon she’d ever had. A year later, I’ve finally tried my hand at it and the results were spectacular!
This is the best bacon in the world. Seriously. It’s unbelievable. I made this today for New Year’s Day brunch and we could hardly speak, it was so good.



The crazy thing is that the macadamia nuts really become one with the bacon. You can pick up a slice and turn it upside down and the macadamia nuts hang on like they’re part of the bacon. The nuts are perfectly toasted and even soften a bit from the maple syrup. It’s a phenomenal texture that must be enjoyed immediately! Without further ado, here is Macadamia Nut Bacon inspired by Suellen’s trip to Hawaii.

Macadamia Nut Bacon
10 strips bacon
2 Tbsp maple syrup
2 Tbsp macadamia nuts, chopped
- Preheat oven to 400 degrees. Spray a large jelly roll sheet with nonstick spray. Cover with aluminum foil. Set a cooling rack on top of jelly roll sheet and spray with nonstick spray. Lay bacon across the rack and bake for 15 minutes.
- Remove from oven and set sheet on counter. Brush maple syrup on bacon with pastry brush, use tongs to flip bacon over, then brush second side with maple syrup. Sprinkle macadamia nuts on each slice of bacon.
- Return to oven and bake for an additional 5-8 minutes or until nuts are lightly toasted. Set bacon on serving dish and let cool for ten minutes before eating.
