Lemon Lox Appetizer

Rodney Strong Wine Review, Wine by the Lake

There are few things I love as much as salmon. I could quite literally eat salmon for breakfast, lunch, and dinner. I even make my own cured salmon! (Which sounds fancier than it is. It’s easy and inexpensive compared to store bought!) Here lox is dressed up with a dollop of mascarpone, a bit of lemon zest, and fresh herbs for a simple starter.

Note: I prefer lox to smoked salmon but you could absolutely use smoked salmon instead in this recipe.

Rodney Strong Wine Review, Wine by the Lake

For this dockside happy hour, I served this easy appetizer with Rodney Strong’s Sauvignon Blanc. It’s a citrusy, refreshing wine that goes perfectly with salmon. Read more about the wine here.
