It was an absolutely perfect spring day yesterday and I wanted to pretend like I was having dinner at my fabulous seaside cottage so I invited my mom over for a beachy dinner in the garden!
I recently rearranged my backyard and was delighted to set the table in its new location for the first time. I chose a white lace tablecloth, woven rattan placemats, and my white outdoor lantern for the occasion. I also set the table with the prettiest green and pink hydrangeas I bought two weeks ago that are still going strong. I used my Emma plates from Pottery Barn, coral napkins, and nautical napkin rings. I thought the table turned out so cute!
For dinner, I made my delicious Under the Sea Pasta from Disney Dinners: The Little Mermaid. (Note: I only had orzo pasta in the pantry so that’s what I used.) There’s just something about clams and mussels that instantly makes me feel like I’m on vacation. This dish tastes so fancy but looks so simple. It’s quick and easy to make and tastes like a lemon explosion.
I also served hummus with beet chips, tomatoes, and cucumber, though we ate it faster than I could get a decent photo! My fabulous Marinated Shrimp would be a delicious starter for a coastal dinner party too.
I finally opened my bottle of 2021 Calcaria from Kuhlman Cellars that I’ve been saving for a special occasion. (You know, like a Wednesday.) I absolutely love this wine. It’s a refreshing blend of Albarino, Roussanne, and bit of Viognier. It has a beautiful scent with tropical notes of pineapple and guava. It’s absolutely delightful paired with seafood! It is the perfect summer white wine.
For dessert, try my Mini Cheesecakes, Blueberry Panna Orange Cotta, Coconut Vanilla Cake, Vanilla No-Bake Cheesecake, Banana Trifle, or Homemade Vanilla Ice Cream with cherry sauce. I hope this inspires you for your very own beachy dinner in the garden!
