I’m kicking off season eight and my year of the horse with a fabulous brunch at the barn. My trainer Hannah is the absolute best and I wanted to treat her to brunch. Plus, nothing brings me more joy than drinking champagne with my horse! I packed up portable breakfast items for a fabulous pink and gold brunch set up at beautiful Laurel Ridge Stables right in front of Wendy’s stall.

The Ambiance
I mean, does it get better than brunch at the barn?! I’ve been dreaming about this moment my whole life! Wendy is like a real Disney character. She has so much personality and entertained us all morning! It’s been perfect weather in Texas lately – it even hit 80 degrees this week! – and it couldn’t have been a better day to host brunch at the barn.
The Table
I took my portable table and new white event chairs to the barn for this brunch and set the table up right in front of Wendy’s stall and styled the table with a white scalloped tablecloth and pink and gold touches. I wanted glitz and glamour! The table was adorned with a single floral arrangement with room on the table for the food.
The Flowers
For the flowers, I styled a lovely pink and white arrangement with pink bleeding roses, mini white roses, and mini white carnations in my favorite gold vase from my Hercules dinner party. I think this combination is so chic for spring!
The Place Settings
I styled each place with my rattan place mats from my Jurassic Park dinner party, pink napkins with gold napkin rings, and gold flatware. So simple and so pretty!
The Drink
Is it even brunch if you didn’t drink mimosas?! A simple blend of orange juice and champagne, this is a staple for a reason. It’s delicious!
The Food
It was tricky to come up with a portable brunch menu, since things like waffles or poached eggs would NOT travel well, but I did it! I settled on some travel-friendly baked goods, fruit, sausage, and the best make-ahead egg dish. Here’s the full menu!

I used make egg cups all the time but fell out of the habit as of late! They’re perfect to take somewhere because they’re delicious room temperature and even cold. Plus, you don’t even really need a fork to eat this tasty egg dish! Perfect for breakfast on the go. Get the recipe here.
Maple and Blueberry Sausage
I fried up some maple and blueberry sausage from Central Market and wrapped it in foil to keep it warm during transport. This was an easy way to make brunch super hearty!
Banana Bread with Bourbon Honey Butter
My Best Ever Banana Bread is so delicious, it’s even featured in my cookbook! Banana bread is one of the first things I ever learned to make and I still make it every single month. Fiori di Sicilia Blueberry Coffee Cake
This is my all-time favorite coffee cake. Fiori di Sicilia is my secret weapon. It makes everythign taste fancier! I can’t recommend King Arthur Flour’s orange-vanilla extract enough, but you can also use vanilla if you prefer. With a buttery cinnamon topping and orange glaze, this blueberry coffee cake is always a hit! Get the recipe here.
Mango Berry Fruit Salad
Last but not least, I tossed together blueberries, blackberries, raspberries, and mango for my brunch at the barn. I’ve been getting shockingly good berries this winter. I often do fruit and yogurt parfaits for brunch but this seemed more casual and easier to pack – perfect for brunch al fresco! Get the recipe here.
Wendy’s Fruit & Veggie Plate
Speaking of fruit, you didn’t think I’d leave out my horse, did you?! I made Wendy her very own fruit and veggie plate styled like a chic cheese plate. I included blackberries, blueberries, alfalfa cubes, watermelon, carrots, and sweet potato. She gobbled it up! The Activity
